Nasi berempah yang patut dicoba.Buat 1/4 kg cukup untuk 4 orang.Untuk hasil yg memuaskan gunakan berasbasmati.Resep dapat dari saudari yang pernah belajar dari seorang istri chef khas makanan timteng.

Bahan-bahan

4 orang
  1. 250 g beras basmati
  2. 200 g daging sapi, potong kecil-kecil
  3. 100 ml yogurt plain
  4. 100 ml santan kara
  5. 3 buah cabe hijau besar
  6. 4 siung bawang putih, cincang kasar
  7. 4 siung bawang merah, cincang kasar
  8. 1 buah wortel, parut
  9. 1 buah bawang bombay,cincang
  10. 1 buah tomat, iris kotak
  11. 500 ml air
  12. Bumbu-bumbu:
  13. 2 sdm kaldu jamur
  14. 1 sdm ketumbar
  15. 1 sdm jinten
  16. 1 sdm pasta tomat
  17. 1 sdm kayu manis bubuk
  18. 1 sdt kunyit bubuk
  19. 1 sdt cengkeh
  20. 1 sdt lada putih bubuk
  21. 1 sdt lada hitam utuh
  22. 5 buah bunga lawang secukupnya
  23. 5 buahKapulaga hijau
  24. 6 buah Kapulaga putih
  25. Kayu manis utuh 1 ukuran keling king
  26. secukupnya Adas
  27. secukupnya Pala
  28. 2 lbr daun salam
  29. Minyak samin
  30. Safron
  31. Hiasan :
  32. Irisan tomat dan ketimun
  33. Kismis hitam/kacang mede
  34. Selada (disini saya pake daun sawi,,, lupa beli seladanya)

Langkah

  1. Cuci beras, lalu rendam selama 30 menit.

  2. Siapkan semua bumbu dan bahan lainnya.

  3. Untuk daging: Panaskan wajan, beri sedikit minyak samin. Ambil sedikit jinten dan kayu manis bubuk, 1 sdm kaldu, 2 buah bunga lawang, 3 buah kapulaga putih, sdikit lada putih, sedikit cengkeh dan pala. Tumis lalu masukkan daging. Kmudian masukkan air. Biarkan mendidih hingga air sedikt menyusut. Angkat dagingnya. Biarkan sisa airnya.

  4. Beras yang sudah direndam, kemudian dimasak (diaron) dengan air sisa perebusan daging tadi. Aduk sesekali. Biarkan hingga air meresap. Angkat dan sisihkan.

  5. Panaskan lagi wajan anti lengket, beri minyak samin. Tumis bawang putih, merah dan bombay.. Masukkan tomat dan cabe hijau utuh, lalu semua sisa bumbu kecuali safron. Jangan lupa masukkan juga daging yg sudah direbus tadi. Ketika berbau harum, masukkan yogurt dan santan. Aduk. Masukkan beras yang sudah diaron. Aduk pelan hingga bumbu tercampur rata. Setelah itu baru masukkan safron yg sudah dilarutkan dengan sdikit air. Aduk asal saja.

  6. Tutup wajan. Kecilkan api (hampir mati). Biarkan kurang lebih 20 menit. Di 10 menit pertama, bakar arang.Simpan diwadah tahan panas. Lalu letakkan diatas nasi. Tutup kembali hingga matang. Maaf, tdk terfoto prosesnya. Setelah Matang,sajikan bersama acar dan taburan kismis/kacang mede. Boleh ditambah dengan daging ayam atau kambing atau sapi panggang.
