Garlic Bread Roll dengan Food Processor

Jika tidak pakai food processor, bisa juga pakai mixer atau tangan yang penting adonannya bisa menyatu dan tidak lengket di loyang adonan. Bawang putih bisa dihaluskan dengan cara diparut atau dicacah halus.

Garlic Bread Roll ini yang biasa dimakan dengan sup kental creamy seperti pumpkin soup. Teksurnya renyah di luar tapi chewy di dalam.

Kendala waktu saya bikin ini adalah cuaca dengan suhu belasan derajat di musim winter jadi susah proofingnya. Jadi saya taruh adonannya diatas heater, baru bisa ngembang.

Bahan-bahan

6 - 7 porsi
  1. 1.5 cup tepung protein tinggi (cakra)
  2. 1 siung bawang putih (asli: 1/2 siung)
  3. 2 lembar keju kraft (asli: 1 ounce/5 sdm parmesan)
  4. 1/2 sdt thyme (asli: 1 sdt)
  5. 1/2 sdt ragi instant
  6. 1/2 sdt garam
  7. 1/2 sdt gula
  8. 1 sdm mentega
  9. 1/2 cup air mendidih 120°-125°C

Langkah

  1. Masukan keju dan bawang putih ke dalam jar food processor yang telah dipasangi pisau tajam stainless (bukan pisau adonan kue yang dari plastik) dan proses 45 detik. Matikan mesin.

  2. Masukan semua bahan lainnya (gula, garam, ragi, tepung, thyme, mentega) ke dalam jar food processor yang berisi adonan keju dan bawang putih tadi.

  3. Nyalakan mesin food processor dan tekan tombol putar sambil tuangi air mendidih. Proses sampai adonan bercampur jadi bola dan tidak ada yang menempel di jar. Lalu biarkan adonan diputar lagi selama 1 menit.

  4. Ambil adonan letakkan dalam wadah yang ditutupi kain. Proofing di tempat yang hangat sekitar 10 menit.

  5. Ambil dan tinju-tinju adonannya. Bagi adonan dan bentuk bulatan jadi 50 gram per porsi atau sebanyak 6 buah (saya tidak pakai timbangan, dikira-kira jadinya 7 buah). Taruh adonan di baking paper yang sudah dilumuri minyak. Proofing lagi 25 menit atau sampai adonan mengembang 2 kali lipat.

  6. Sementara menunggu proofing ke-2, panaskan oven 190°C (untuk porsi 6 roti). Saya setting suhu oven 180°C karena size roti dibuat lebih kecil (7 roti).

  7. Setelah adonan mengembang, ambil adonan bersama baking papernya dan oven selama 20 menit atau sampai permukaan roti berwarna kuning keemasan.

  8. Keluarkan roti dari oven dan dinginkan. Garlic bread roll sebaiknya dimakan dalam keadaan hangat untuk teman makan pumpkin soup, pasta, salad atau sarapan pagi.
